One of our favorite things about moving into the new building is that we have so much more space in the kitchen to expand our offerings. Now we get to tap into our abundant seafood resources here along Tillamook Bay and within our sight over there in the Pacific Ocean. Master Chef Dennis gets to step away from the smoker and create dishes inspired by his childhood summers in Garibaldi.
Here are a few we’re trying out:
1) Dungeness Crab Ravioli
We first introduced Dungeness Crab Ravioli to our special menus in mid-January 2020. Since then, it’s been a top-seller. When we can get it from the boats, we get on the menu.
2) Prawn Fettuccine Alfredo
We’ve had Fettuccine Alfredo (mostly) on the menu since last fall.
You keep asking for it. We keep shopping for Garibaldi Marina for prawns.
3) Crab Melt
We apologize if it feels like we’re teasing you with our occasional pop-up appearances of the Crab Melt, but typically we clean & prepare the crabs ourselves. Because of the prep work, at this time we have to plan for crab melt days. We hope you continue to find it worth the effort.
4) Smoked Albacore Tuna Melt
This one came out in December ’19. As Albacore Tuna comes in season, and we are able to get it from the local boats, we’ve been putting it in to the melt.
When Albacore Tuna season comes back this summer, you’ll find us shopping along Tillamook Bay. Still placed directly on the smoker. Still flaked. Still incredible.
5) Tillamook Bay Shrimp
We’ve been including Tillamook Bay Shrimp into more and more of our plates, pastas, salads, and, yes, shrimp cocktails, too.
We’ll be coming up with new & incredible ways to integrate Tillamook Bay Shrimp into more & more of our dishes.
And if Louisana-native Chef Angela gets her way: Many more Cajun-spiced Shrimp dishes, too.
Keep on the lookout.
6) Clam Chowder
Yes. Clam Chowder is probably going to become a staple on our daily menu, again.
No. It doesn’t have bacon.
Yes. We can add bacon upon request.
Agreed. It’s one of Chef Dennis’ more secretive, incredible dishes.
Yes. We, too, want some too. Like, right now. This second. Like, be right back…
M’mmmm.
What were we talking about?
7) Popcorn Shrimp
We’ll be honest: When we opened at little Bistro back in 2016, we never thought we’d be in a position to offer Popcorn Shrimp. But, here we are and here it is. Offered as appetizers and salad toppings, Popcorn Shrimp is that perfect snack to keep the conversation lively on rainy days and snack upon, one at a time – if that’s possible, as y’all watch the sun slip down behind Bayocean.
8) Clam Strips
Like the Popcorn Shrimp, we didn’t ever think a place known for ribs & brisket would ever be in position to offer clam strips, despite Tillamook Bay 20 steps from our front doors.
We have it, but be careful: they’re sometimes too good. Deceptively good. Sneakily good. So good you’ll realize they’re great only after your plate’s empty.
9) Steamer Clams
We know, we know.
But, y’all are known for smoked meats.
– Many, many people.
It is true. You are correct. Please forgive us, because these clams came from right back there by the 12th St. Pier, or over in Miami Cove. Sometimes, they’re from as far away as Bay City (gasp!), and on the rare occasion, Netarts Bay (double-suck-the-air-out-of-the-room-gasp!).
But our steamer clams are from there nearby spots. We keep it as local as we can get them when we can get them. And they’re so good. Just, so ‘wow’ good. And Chef Dennis & Angela love to steam pot them. And customers love them.
How do we say no? That’s right. We don’t.
More Seafood to come, as we can locally source them.
